Salmon grill with Shio Koji

Tonight I cooked Salmon grill with Shio Koji !



What is “Shio Koji”?

Shio Koji is a kind of Japanese seasoning, which is fermented with Koji, salt and water for about 1 week.

It taste sweet and salt, because rice starch from Koji convert into sugar.

It suit to meat, fish and vegetables! It makes foods taste better, 

because it takes apart starch and protein inside ingredient and take out “Umami” and sweetness more.

If you pickle meat with Shio Koji, the meat gets softer. If you grill meat or fish with Shio Koji,

You can brown beautifully.

So piquant, isn’t it?

It also has good effect for your beauty.

For example,

It is fermented food, so it has lactic acid bacteria.

It has Detox effect and make your phoo phoo smooth. Haha

It has vitamin B and GABA which help Anti aging!!


The recipe is very easy..


1. Put Shio Koji on salmon

2. Put your favorite vege or mashrooms

3. One spoon of olive oil and sake

4. Grill by oven for about 20 mins
